The Weekly Feed: Countdown Edition
Where: Balducci's, Harris Teeter, Trader Joe'sThe last space shuttle mission, which ended this week, likely reminded many people of their childhood aspirations and the sense of awe they felt when they counted down to shuttle launches. Like any kid, I was enamored by the idea of outer space and astronauts. But I think one of the things I was most excited about when visiting NASA's Kennedy Space Center was getting to try space food : astronaut ice cream and freeze-dried strawberries. However interesting the idea, the end result was, in my opinion, a little gross tasting.
I'm not sure if my tastes have changed or if freeze-drying technology has improved the quality of freeze-dried foods, but I've discovered a number of freeze-dried fruits I love. And not all freeze dried fruit is created equal. For instance, the freeze-dried mangoes from Trader Joe's leave something to be desired, with a blandly sweet vanilla-like flavor that lacks the tart contrast that makes good mangoes so appealing. But at the recent Fancy Food Show that took place in D.C., I tried the freeze-dried fruits from Crispy Green . Among their selections was a brightly flavored mango and a wonderfully sour kiwi, which can be found at Balducci's and some Harris Teeters. But other brands of freeze-dried fruit snack packs can easily be found at Giant, Whole Foods and Target.
Freeze-drying is a process that starts by freezing a material and reducing the pressure to sublimate (in this case) frozen water immediately into steam. Foods are freeze-dried to store them almost indefinitely, as well as to decrease their weight. Recent research has demonstrated that the many of the nutritional properties of freeze dried fruits and vegetables are preserved. While they may not be a perfect substitute for the best aspects of fresh fruit, it's a good substitute during the winter and make a surprising garnish when ground in to a powder atop various dessert. And at least for a few minutes, you can pretend you're an astronaut.

Baobab Foods, which sells food bars and a fruit powder made from baobab dried fruit powder, said the fruit pulp is separated from the seeds and sieved before packing without pasteurizing, heat extracting, freeze drying or concentrating.
The recipe calls for two to three cups of dried fruits and nuts. In my mix, I used walnuts, dried cranberries, dried apricots, sunflower seeds, unsweetened coconut flakes, for aroma and taste, and flaxseeds for their subtle nutty flavor and abundance
I wouldn't trust any fresh fruit or vegies from China. We planted blueberry bushes years ago. Last summer we got 85 metric cups! Use what you want and the rest get put in the deep freeze for later use. @ Michael - the article references "freeze-dried

I received 5 bags of freeze dried fruit from Crunchy N Yummy to do my review on. I received Mango, Pineapple, Banana, Strawberry, and Papaya. I have never tried Freeze Dried fruit before so I'm not sure what to expect... I started to try them.... they all have a very different smell to them, but don't let that throw you off. They are all Crunchy and just melt in your mouth. I tried Pineapple which I wasn't to thrilled with (I'm not into pineapple), then the Banana, which wasn't to bad, you could taste the banana flavor, followed by the mango (my boyfriend tried) he said it had a sweet flavor to it, next was the papaya, which I've never actually had before, it wasn't my favorite fruit, a very weird taste to it, then finally the Strawberry (my favorite real fruit)...I don't think they are too bad for not being an actual fruit, but I will stick to the real ones. I think all of the freeze dried fruits would taste great in cereal though, after the milk soaks in to them..yum! Overall I don't think Freeze Dried Fruits are for me, but my boyfriend did like them compared to other dried fruit he has eaten.
